Its conclusion is rocking the health world with startling bluntness: Processed meats are too dangerous for human consumption. Consumers should stop buying and eating all processed meat products for the rest of their lives.&lt;br /&gt;Processed meats include bacon, sausage, hot dogs, sandwich meat, packaged ham, pepperoni, salami and virtually all red meat used in frozen prepared meals. They are usually manufactured with a carcinogenic ingredient known as sodium nitrite. This is used as a color fixer by meat companies to turn packaged meats a bright red color so they look fresh. Unfortunately, sodium nitrite also results in the formation of cancer-causing nitrosamines in the human body. And this leads to a sharp increase in cancer risk for those who eat them.&lt;br /&gt;A 2005 University of Hawaii study found that processed meats increase the risk of pancreatic cancer by 67 percent. Another study revealed that every 50 grams of processed meat consumed daily increases the risk of colorectal cancer by 50 percent. These are alarming numbers. Note that these cancer risks do not come from eating fresh, non-processed meats. They only appear in people who regularly consume processed meat products containing sodium nitrite.&lt;br /&gt;Sodium nitrite appears predominantly in red meat products (you won't find it in chicken or fish products). Here's a short list of food items to check carefully for sodium nitrite and monosodium glutamate (MSG), another dangerous additive:&lt;br /&gt;Beef jerky&lt;br /&gt;Bacon&lt;br /&gt;Sausage&lt;br /&gt;Hot dogs&lt;br /&gt;Sandwich meat&lt;br /&gt;Frozen pizza with meat&lt;br /&gt;Canned soups with meat&lt;br /&gt;Frozen meals with meat&lt;br /&gt;Ravioli and meat pasta foods&lt;br /&gt;Kid's meals containing red meat&lt;br /&gt;Sandwich meat used at popular restaurants&lt;br /&gt;Nearly all red meats sold at public schools, restaurants, hospitals, hotels and theme parks&lt;br /&gt;If sodium nitrite is so dangerous to humans, why do the FDA and USDA continue to allow this cancer-causing chemical to be used? The answer, of course, is that food industry interests now dominate the actions by U.S. government regulators. The USDA, for example, tried to ban sodium nitrite in the late 1970's but was overridden by the meat industry. It insisted the chemical was safe and accused the USDA of trying to "ban bacon." Today, the corporations that dominate American food and agricultural interests hold tremendous influence over the FDA and USDA. Consumers are offered no real protection from dangerous chemicals intentionally added to foods, medicines and personal care products.&lt;br /&gt;You can protect yourself and your family from the dangers of processed meats by following a few simple rules:&lt;br /&gt;Always read ingredient labels.&lt;br /&gt;Don't buy anything made with sodium nitrite or monosodium glutamate.&lt;br /&gt;Don't eat red meats served by restaurants, schools, hospitals, hotels or other institutions.&lt;br /&gt;And finally, eat more fresh produce with every meal. There is evidence that natural vitamin C found in citrus fruits and exotic berries (like camu camu) helps prevent the formation of cancer-causing nitrosamines, protecting you from the devastating health effects of sodium nitrite in processed meats. The best defense, of course, is to avoid eating processed meats altogether.&lt;br /&gt;[Ed. Here are a few examples:&lt;br /&gt;...&lt;br /&gt;Atrazine is a herbicide used throughout the world for a varied range of uses including macadamia nut production.  This environmental contaminant is regularly found in rain, surface, marine, and ground water and has been found in well water in the American Midwest.  It is known to harm aquatic organisms like fish and frogs.  There is some evidence that it may have a negative impact on human reproduction.&lt;br /&gt;...&lt;br /&gt;Cyfluthrin, which has been used for decades on nuts, is known to be highly toxic to marine and freshwater organisms.&lt;br /&gt;...&lt;br /&gt;Endosulfan is banned in many countries but legal in the United States and India, where it is used in cashew production. This pesticide presents health risks to farm workers and to those living near where the chemical is used. In December 2003, studies showed a link between endosulfan exposure and delayed sexual maturation in boys in India. Animal studies indicate that the pesticide attacks the central nervous system, and can cause damage to the kidneys, testes, and liver. It is highly toxic to animals and fish as well.&lt;br /&gt;...&lt;br /&gt;Methyl Bromide. Once harvested, nuts are often fumigated with methyl bromide, a toxic pesticide. While methyl bromide probably won’t cause any harm to you when you eat nuts or other treated crops, it is quite dangerous for the farm workers who use it. Phenolic acids and flavonoids are classes of potent plant chemicals that exert multiple health benefits as antioxidants and anti-inflammatories. The researchers wanted to see if these antioxidants would have an affect on the formation of triglycerides, the chemical form in which most fat exists in food and in the body.&lt;br /&gt;Sure enough, they did. Two antioxidants in particular, o-coumaric acid and rutin, were found to inhibit the creation of triglycerides by 61 percent and 83 percent, respectively. Not only that, these same two antioxidants also increased the levels of a protein called adinopectin. This protein has been found to have protective effects against atherosclerosis and, even more to the point, helps cells become more sensitive to insulin. Look for dark varieties with thick skins. Also, try eating them seeds and all. It's an acquired taste, I know. For brain cells to communicate effectively with each other to create neural pathways, they require chemicals called neurotransmitters. Neurotransmitters are the 'messengers' carrying messages from neuron to neuron. &lt;br /&gt;&lt;br /&gt;Neurotransmitters are made from amino acids found in protein foods e.g., eggs, meat, fish and cheese.&lt;br /&gt;Vitamins and minerals are needed to convert ordinary amino acids into these powerful neurotransmitters.&lt;br /&gt;Neurotransmitters are found in the food we eat, hence why some foods are called 'brain foods'.&lt;br /&gt;&lt;br /&gt;The three key neurotransmitters are: &lt;br /&gt;&lt;br /&gt;1. Acetylcholine (ACh). This neurotransmitter excites other neurons and may be responsible for memory. &lt;br /&gt;It is involved with voluntary movement of muscles, behavioural inhibition, drinking and memory.&lt;br /&gt;People with Alzheimer's memory loss may have less ACh or ACh that is blocked.&lt;br /&gt;Acetylcholine rich foods include:&lt;br /&gt;egg yolks, peanuts, wheat germ, liver, meat, fish, milk, cheese and vegetables (especially broccoli, cabbage and cauliflower)&lt;br /&gt;&lt;br /&gt;2. Dopamine generally excites and is involved in movement, attention and learning but is also inhibitory.&lt;br /&gt;It is involved with voluntary movement, emotional arousal.&lt;br /&gt;Schizophrenia is associated with excess dopamine.&lt;br /&gt;People with Parkinson's disease may have less or damaged dopamine causing tremors, loss of balance etc. The drug "L-Dopa" may be given to increase the level of dopamine. &lt;br /&gt;Dopamine rich foods include:&lt;br /&gt;all proteins (meat, milk products, fish, beans, nuts, soy products).&lt;br /&gt; 3-4ounces of protein will help you to feel energized, more alert and more assertive.&lt;br /&gt; &lt;br /&gt;3. Serotonin (or 5-HT) usually inhibits and is involved in arousal and sleep, mood, appetite and sensitivity. Anyway, if you are in the same situation, here's a good definition:&lt;br /&gt;&lt;br /&gt;In the body, nutrients such as beta-carotene (a vitamin A precursor), vitamin C, vitamin E, and selenium have been found to act as antioxidants.&lt;br /&gt;&lt;br /&gt;They act by scavenging free radicals, molecules with one or more unpaired electrons, which rapidly react with other molecules, starting chain reactions in a process called oxidation.&lt;br /&gt;&lt;br /&gt;Free radicals are a normal product of metabolism; the body produces its own antioxidants (e.g., the enzyme superoxide dismutase) to keep them in balance. However, stress, aging, and environmental sources such as polluted air and cigarette smoke can add to the number of free radicals in the body, creating an imbalance.&lt;br /&gt;&lt;br /&gt;The highly reactive free radicals can damage healthy DNA and have been linked to changes that accompany aging (such as age-related macular degeneration, a leading cause of blindness in older people) and with disease processes that lead to cancer, heart disease, and stroke.&lt;br /&gt;&lt;br /&gt;Studies have suggested that the antioxidants that occur naturally in fresh fruits and vegetables have a protective effect. For example, vitamin E and beta-carotene appear to protect cell membranes; vitamin C removes free radicals from inside the cell.&lt;br /&gt;&lt;br /&gt;There is still some question as to whether antioxidants in the form of dietary supplements counteract the effects of increased numbers of free radicals in the body. Well, as a veggie its of most concern, but there's no need to worry, as there are plenty of sources, such as nuts, lentils, chick peas, wholemeal bread, seeds, apricots, and particularly spinach.&lt;br /&gt;&lt;br /&gt;Moreover, by eating vitamin C and other organic/citric acids with your iron source you can help your body to absorb the iron, as the vegan society explain on their website:&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;The absorption of iron from plant foods is improved by the presence in a meal of vitamin C (ascorbic acid), other organic acids such as malic acid (e.g. in pumpkins, plums and apples) and citric acid (in citrus fruits). Laboratory research in which experimental meals were given to 299 volunteers has shown that the inclusion of foods (such as fresh salad, orange juice or cauliflower) providing 70-105mg of vitamin C in each meal increased the absorption of iron. Although it hasn't got a great reputation for taste, pumpkin pie and other squash foods, and the seeds, pepitas are very good for you.  You can get the seeds in nice little packets from shops of course, but they can also be eaten straight from squashes and pumpkins. &lt;br /&gt;&lt;br /&gt;Good seasonal food in the northern hemisphere, and cheap as well: I know because I bought a squash for the first time the other day.  Didn't really know what to do with it until I googled squash and squash seeds, and had difficulty cutting the fruit (yes, its fruit) out, but got there in the end, and fried it up nicely with a load of other veg and spices.
